Cheetah’s Yummy Soup

Cheetah, aka Michelle G, sent me this recipe back in March, and it has become a real crowd pleaser at Chez Crawford.  The girls love it, it's pretty inexpensive, it's filled with yummy nutrition, and it's easy!

Sweet Potato, Sausage and Kale Soup

2 tablespoons olive oil
4 cups chopped onions
6 garlic cloves 
1# sausage (Italian, smoked, Andouille etc) sliced in bite size pieces or remove casing and break up into bite size pieces when cooking.  Or you can grill them and then cut them up
6 cups coarsely chopped peeled sweet potatoes
5 cups water
4 cups low sodium chicken broth - make your own, it's yummier
1 bunch of kale (about 16oz) torn

Prep
Heat oil in large Dutch oven over medium-high heat.  Add onions, saute 5 min.  Add pepper and garlic, saute1 min.  Add sausage to pan and cook untill sausage is lightly browned.  Add potatoes, water and broth.  Bring to a boil.  Reduce heat and simmer 8 minutes.  Gradually add kale and remaining salt.  Cook 10 min. or until tender.

  • Yes indeed Mike … Go USA!!  Jared, you’ll have to come over and fight all 4 Crawfords for a taste … well, maybe not a taste, but more than that.  I had some postWOD today, and it really hit the spot.

    Jesse & I did a partner WOD in preparation for SuperFit.  As a team, do 30 HSPU, then 10-8-6-4-2 squat snatch 115/75, alternating with 20-16-12-8-4 Games push ups, with bear crawl between stations.  7:37, I think.  Fun partner WOD.

    (51 x 5) + (191) = 446

    OHS felt really “wobbly” today…frustrating!
